Hi, I’m Cody Stubbe RN, MSN, and a Food For Life Instructor!

I’m a Nursing Instructor in Omaha and Lincoln, Nebraska. I advocate for lifestyle changes to improve health with emphasis on whole food plant-based nutrition. I’m also a Food for Life instructor trained by the Physician’s Committee for Responsible Medicine and enjoys teaching evidence based nutrition/cooking classes. I enjoy sharing my love for healthy food with my 3 daughters and cohosts a kids cooking show – So Many Kids in the Kitchen! I also enjoy doing cooking shows with my fellow instructors world-wide on So Many Cooks in the Kitchen Live Streams! 

I feel extremely passionate about educating children on how to eat to prevent obesity and chronic diseases. I also have a passion for teaching healthcare providers and healthcare students the power of evidence based nutrition since it reduces risk for chronic diseases, certain cancers, and can even reverse some chronic diseases. I’m also a strong advocate for change to improve food in health care systems to promote healing in patients.

Me as a Child Cooking

Originally from rural Nebraska, I went to get my prerequisites at McCook Community College and then on to University of Nebraska Medicine College of Nursing in Kearney Nebraska where I earned my BSN degree and then got a RN license in 2002. I then worked in Kearney as a surgical operating room nurse (specializing in open-heart surgery) at Good Samaritan Hospital until 2005, and then moved to Omaha and continued specializing in open-heart and vascular surgery at Methodist Hospital until 2007. Seeking a new challenge, I then went to Offutt Airforce Base outpatient surgical department and specialized in orthopedic surgeries. By 2009, I started my teaching career at Kaplan University (now Purdue University Global) in Omaha and have enjoyed teaching in many facilities in the Omaha/Lincoln areas. I’ve also been teaching as a nursing instructor for Nebraska Methodist college since 2013 in many courses and clinical sites in the Omaha area. In 2013, I earned my MSN.

Most recently, I completed my Physician’s Committee for Responsible Medicine -Food for Life Instructor training, in 2019.

In 2020, I Cofounded So Many Cooks in the Kitchen and So Many Kids in the Kitchen, which I continue to cohost.

Services:

Food for Life Classes – (currently Online) great for an addition to compliment nursing curriculum (or other healthcare specialty) to teach students the power of evidence based nutrition and how easy it is to cook whole food plant-based. Upon request for groups and posted dates.

Employee Wellness Nutrition Classes– Great for businesses to help improve the health of their employees.

Consultation for integrating whole food plant based into facilities. Can work with in-house chefs to assist in integrating this into menus and can provide batch recipes.
