INGREDIENTS:

- 2 apples cut into bit sized pieces
- ½ – 1 pineapple cut up
- 1 pint blueberries, rinsed and drained
- 1 can mandarin oranges
- ½ cup carrots, either shredded or cut into coins (optional)
- 1-2 Tablespoons fresh mint leaves, whole or cut up (optional)
- In a large bowl, add all the ingredients and mix up.
- Serve Chilled
