INGREDIENTS: Dressing

DIRECTIONS:

  • 4 cups kale, washed and destemmed, and ripped into bite-sized pieces
  • 1 can mandarin oranges, drained
  • 2 apples chopped
  • 1 Tbsp. sesame seeds
  • ¼ cup fresh orange juice
  • ¼ cup rice vinegar
  • 2 tsp. white or yellow miso
  • 1 Tbsp. maple syrup or agave
  • 1 clove garlic, minced or grated
  • 2 tsp. black sesame seeds (omit if using sesame seeds above, this is from pcrm’s recipe)
  1. In a large bowl, add the kale, oranges, sesame seeds, and apples and mix up.
  2. In a separate smaller bowl add the ingredients for the dressing and mix well.
  3. Combine the dressing with the mixed vegetables and stir it well.
