DIRECTIONS:

- 4 cups kale, washed and destemmed, and ripped into bite-sized pieces
- 1 can mandarin oranges, drained
- 2 apples chopped
- 1 Tbsp. sesame seeds
- ¼ cup fresh orange juice
- ¼ cup rice vinegar
- 2 tsp. white or yellow miso
- 1 Tbsp. maple syrup or agave
- 1 clove garlic, minced or grated
- 2 tsp. black sesame seeds (omit if using sesame seeds above, this is from pcrm’s recipe)
- In a large bowl, add the kale, oranges, sesame seeds, and apples and mix up.
- In a separate smaller bowl add the ingredients for the dressing and mix well.
- Combine the dressing with the mixed vegetables and stir it well.
