Lentil Loaf

(Mix the below ingredients in a smaller bowl)
ยฝ c. water
ยฝ c. BBQ sauce
ยผ tsp โ€“ ยฝ tsp liquid smoke
1 tsp Veggie Bouillon
ยฝ tsp paprika
1 tsp Garlic powder
1 tsp Onion powder
ยผ tsp pepper
1 tsp ground Sage

2 ยฝ c. Cooked brown lentils
ยผ c. oats
1 ยฝ psyllium husk
1 ยฝ T. ground flax seed
(Mix the above ingredients in a large bowl)

  • Add the wet ingredients into the large bowl and mix well
  • Line a bread pan w/ tin foil and give a light spray of cooking oil
  • Pour the mixture into bread pan
  • Bake at 350 degrees for about 45 min
  • OPTIONAL – add a thin layer of BBQ Sauce after baking

Mushroom Gravy

1- Container/bag (14 oz) of fresh or frozen mushrooms (White or Portabella), Cut up
1 1/2 – 2c. Water
1 tsp Veggie Bouillon
ยฝ tsp. Garlic powder
2 T Cornstarch
ยฝ Water

In a frying pan, add mushrooms and garlic and water sautรฉ on med/high heat until edges get browned a bit. Add water (2 cups) and Bouillon for the sauce and let it get hot. Then, in a cup, add cornstarch to ยฝ C. water and whisk it up. Add this cornstarch mixture into mushroom pan and whisk until it starts to thicken.
Great over mashed potatoes, too!
